Sauteed Sayote Tops with Corn
Ingredients:
4 cups sayote tops
3 cloves garlic chopped
1/4 cup chopped onions
2 tbsp. cooking oil
125 grams ground pork
2 cups whole corn kernel
salt and pepper to taste
Procedure:
1. Hold the stem of the sayote with two hands and snap the tough portion off, discard tough part.
2. Cut the tender portion into 2 inches long stem, peeling off tough sinews from stem (the way you do with the celery)
3. Cut tendrils into bite size pieces. Put stems, leaves and tendrils in a bowl and rinse under running water.
4. In a medium wok or sauce pan, saute garlic and onions in cooking oil. Add ground pork, and season with salt and pepper.
5. Cook for 5 to 8 minutes over medium heat.
6. Add sayote tops and cook just until tender, about 3 minutes.
7. Add corn and simmer for another 5 minutes.
8. Serve hot.
